Brazil Nut Truffle Cookies

This cookie recipe is one of my favorites from Raw Epicurean Cookies – 20 Raw Vegan Cookie Recipes. These cookies are perfect little raw bit-sized sweet treats that are quick and easy to make.
Brazil Nut Truffle Cookies
When a recipe calls for dried fruits, unless I dry the fruit myself, I use a brand that is organic and unsulfured. If you do not have dried apricots, other dried fruits like blueberries, pears, papaya or pineapple, would make great stand-ins.
½ cup coconut flour
½ cup organic dried, unsulfured apricots, chopped
¼ cup fresh grated or organic unsweetened shredded coconut
1/3 cup agave
1 teaspoon vanilla extract or 1/2 vanilla bean
Combine the ingredients
Place all ingredients in a food process and process until the dough turns into a ball.
Shape the truffle cookies
Scoop out a spoonful of dough and shape into round balls.
Coating the cookies
Start an assembly line from left and right – line up the truffle cookies, then a bowl or cup with enough agave to coat truffle cookies, a small bowl/cup with coconut flakes or chopped brazil nuts, and then a clean plate.
Work from left to right – take one truffle cookie with your left hand and dip in agave, then drop into the coconut or brazil nuts, and with your right hand roll truffle cookies in coconut/brazil nuts and place on plate.
Yield 20 truffle cookies

Mmm! I’m assuming coconut flour is just dried coconut pulverized to a fine powder, right?

Oh wow! Don’t those look amazing! Now I just need to find unsulfured dried apricots. Hmmm…maybe my local raw vegan store has them.
Hi Heidi - … let’s see, Whole Foods markets, Trader Joe’s, any healthy food store, the health food selection of grocery stores, at all these places I’ve spotted organic unsulfured dried apricots. The brand of dried apricots I’ve used is Made in Nature Organic Unsulfured Apricots, I buy it at my local health food store. It is also available online at amazon.com.
Oooh, I’m going to do these this week. I happen to have all the ingredients on hand (rare) and I’m excited that it doesn’t need a dehydrator….can’t wait!

These look good and I have all the ingredients so I will be trying these this weekend. Just brought home the coconut flour, Bobs Red Mill, and from the smell of it, I think it will be a great addition to the pantry and your recipe. Thanks for sharing!
Hi Cheryl A - A few month ago, I was in Oregon and had a chance to stop by Bobs Red Mill store. It was fun browsing and shopping there in person for the things I usually order online. It is great that you are using coconut flour. Do you use other coconut products, like coconut butter and oil? Let me know how the cookies turn out for you, I hope you enjoy them.
Well, as you noticed in my last entry (awhile ago now…I need to blog more!) I did manage to find some unsulfured apricots (Turkish) which I think will be super tasty. I’m going to make these tomorrow to take to a friend’s house for a raw dinner. I can’t wait to try them!

OK, I made these up this weekend and I will definitly make them again. My sweets are almost always ooey, gooey and chocolate so this was a change for me, but I liked them and their subtle sweetness! Next time I think I will try dried pineapple, make it a little Caribbean tasting. Thanks Ingrid, every time I try a recipe my interest grows in your raw food world…and that’s a good thing!

this looks great! so many raw recipes require a dehydrator, which i don’t have, so i’m excited to see something that doesn’t! i’ll definitely try these this holiday season.
