Borsch Soup + Going Raw DVD

Borsch soup is one of the most popular vegetable based soups originating from Eastern Europe. This healthy soup is traditionally made with beetroots as the main ingredient.
I love beets and have made different variations of this soup, from a quick and simple version, to a more complex soup with lots of complimentary ingredients.
This soup showcases a gorgeous hue ranging from pretty pink to a deep vibrant reddish-purple, colors only beetroot can offer, no matter what other ingredients are tossed into the mix.
This particular borsch recipe is from the recipe collection in the DVD Going Raw. It is a deliciously healthy and simple recipe, and a wonderful way to enjoy raw beets.
Tip – for those of you who don’t own a high-speed blender, grate the beets using a food processor with the grating disc attachment, or use a box grater. This way the beet pieces are small enough for a standard blender to liquefy with ease, and it helps create less stress on the machine.
Borsch Soup
Basil and sun-dried tomatoes add delicious flavor to this already delicious soup. If these ingredients for garnish aren’t available, try using other herbs like cilantro, as suggested, dill or thyme.
I used lucuma powder in place of the dried cane sugar called for in the original recipe.
1 cup carrots, chopped
1 cup celery, chopped
1 cup water
2 tablespoons lucuma powder
1 teaspoon sea salt, or to taste
1 tablespoon lemon juice
1 tablespoon cold pressed olive oil
Fresh basil or cilantro
Sun dried tomatoes
Place the beets, carrots, celery, water, sea salt, lemon juice and olive oil in a high-speed blender. Blend until liquefied or to desired consistency.
Pour into a bowl and garnish with fresh basil or cilantro, and sun dried tomatoes.
Serves 1-2

Here’s a favorite I’ve been enjoying quite a bit recently with the frigid temps we’ve been having:
Curried Coconut Soup
meat & water from one young coconut
3 C carrots, grated
1 onion, chopped
1 Tbsp fresh lemon juice
2 Tbsp curry powder
1 tsp grated ginger root
cayenne to taste
Combine all ingredients in a blender and puree. Garnish with fresh cilantro.
My favorite raw soup is gazpacho in the summer, and creamy celeriac soup in the winter. But I like the Boutenko’s dehydrated soup as well. There are so many good soups. It is difficult to choose a favorite!
I have to admit that I have never tried this raw. I am going to now, as I want to compare the flavor to that of the roasted and boiled variations of this recipe.
I have had raw carrot soup, and to me it simply seemed like a thickened carrot juice cocktail.
Thank you for stopping by and welcomeErik! I’m not clear on which soup you are referring, is it the Split Pea soup? Yeah, raw soups vary in texture and consistency depending on how it is prepared and the other ingredients used in a recipe.
Oh!! I LOVE raw soups! Have been having them daily for going on 8 years! I’d have a hard time picking just one favorite. Let’s see… I’ll go with Jennifer Cornbleet’s wonderfully simple Cream of Zucchini Soup. It can be whipped up in just a few minutes and is so, so tasty and creamy!
Hi Carmi! That’s the beauty of most raw soup recipes, they are fresh, quick, and easy to make. Cream of Zucchini soup sounds good.

The first one in my list would for sure be “Lentil Sprout and Tomato Soup” (it’s gives you that “warm” feeling of a hot broth, good for winter.)

I simply LOVE coconut curry soup! Almond milk, young thai coconut, and spices create a delightful warm soup.
Thai sweet and sour coconut-tomato soup with fresh spring onions and coriander!!!
My favorite soup is an original Tomato-Cilantro soup of mine.
3 small tomatoes
4 sundried tomatoes – soaked in hot water for 10 minutes
1 teaspoon honey
1 garlic clove, minced
7 sprigs cilantro
1 tablespoon lemon juice
1 ½ teaspoons soy sauce (or 1 teaspoon Nama Shoyu)
2 tablespoon olive oil
pinch cayenne pepper or red pepper chili flakes
Put all of the ingredients in a blender. Add just enough water to cover the ingredients. Blend.
Pour into a bowl. I added chunks of avocado. Whoo hoooooo this is good!

Mmmm, my favourite raw soup is definately tomato basil, with spinach soup coming in a close second :)

My favorite raw soup: Energy Soup
Base: 2 cucumbers or l cucumber & 1 bell pepper
Garlic cloves
Cilantro or coriander
Spinach
Lettuce and whatever else green you decide
Water
Meyer lemon juice
Blend above then blend in avocado and sprouts and dulse.
Garnish with sprouts, etc.
This recipe has WAAAAAAAAAAAAAY too much salt. I think it should have been like an 1/8 of a tablespoon… It tasted a bit like salt soup!
