Green Leafy Recipe Contest

Here are the delicious recipe submissions for Raw Epicurean’s Green Leafy Recipe contest that was a part of and kicked off our first Annual Healthy Holiday Giveaway!
Thank you for all the recipe submissions. They each look and sound wonderful but now I have the not-so-easy task of choosing one recipe for the draw for one Lexen Healthy Juicer, courtesy 877myjuicer.com.
I am happy to announce that Faye Nulman of A Kneaded Escape, who submitted Baby Spinach and Tawco Meat Salad, wins the Lexen Healthy Juicer!!! Congratulations Faye!!!

Faye Nulman of A Kneaded Escape Baby Spinach and Tawco Meat Salad
3-4 sun dried tomatoes
¼ cup pecans
½ cup sliced mushrooms
¼ of a small onion
Splash of shoyu
Small squeeze of fresh lime (approx. 1 teaspoon)
Heaping teaspoon Cumin
Hing (Asifoteda, available in Indian grocery stores) Garlic can be substituted if exotic ingredients are an issue.
Heaping ½ teaspoon Ground Coriander
Pinch or so Caynne depending how you like it.
Place all in the food processor and pulse till desired consistency.
On desired serving plate, lovingly place Baby Spinach Leaves. Layer on top of this, thinly sliced tomatoes, top this layer with avocado slices or chunks, (your preference). Lastly, with your fingers, place bits of the tawco meat over the top layer. It will really look like the old SAD meat! Garnish with some finely chopped Cilantro! Enjoy with some fresh made salsa!

Fröliche Weihnachten means Merry Christmas in German
10 Red Grapes
1C Cranberries
10 Baby Collards
10 Kale
4 sticks of Celery
1/2C Pomegranate seeds
Juice all the ingredients, stir well and drink.
