Spinach Breakfast Drink

This drink recipe is from my ebook Raw Epicurean Beverages – 101 Fresh Organic Recipes

Most mornings I begin my day with something very light for breakfast, usually something liquid, like tea or a juice like this nourishing drink. I love juicing and blending fruits and vegetables to make cleansing and purifying beverages.

The spinach, orange, grapes, and strawberries combined make an energizing beverage to help jump-start the day. It’s another gorgeous green drink, thanks to the dark green chlorophyll from the spinach. One glass contains plenty of vitamin C and K, manganese, dietary fiber, iron, calcium, and other useful vitamins and minerals, it’s a healthy way to start the day, don’t you think?

A couple posts ago I mentioned One Week Raw, created by Heather of Kombucha Chic, well this free ebook is now available for download. I like the concept. There are many yummy recipe contributions. Spinach Breakfast Drink is one of the recipes I contributed for day six of One Week Raw. It is a nice guide for those of you interested in trying a raw food diet or try eating only raw daily, at least for one week.

Spinach Breakfast Drink

I use spinach, but you can substitute with other greens like kale or collard. Double, triple … the ingredients as needed to make more drinks.

2 cup spinach, washed and packed
½ cup strawberries, green tops removed, halved
½ cup green grapes, or red or black
½ cup orange juice, fresh squeezed [about half an orange]

Juice the spinach leaves in a juicer. Pour spinach juice in a blender and add the remaining ingredients. Blend until all the fruit is liquefied.

Serve immediately.

Serves 1
