Gazpacho Juice

Today is day 8 of juice feasting and up to this point my juice feasting experience has been easy and without any major detox episodes (knock on wood).
I feel great and to celebrate reaching my minimum goal of 8 days (21 days is my maximum goal), I made this delicious juice drink inspired by this recipe Gazpacho.
When I juice fresh greens, like parsley, basil, and thyme for example, I generally juice the leaves with the stems attached. The stems contain nutrients too.
Gazpacho Juice
I really enjoy this drink. It’s flavorful and refreshing. If you like a little spicy kick, add a dash of cayenne pepper or juice a small jalapeno pepper, or half of one, depending on how much heat you can tolerate.
1 bunch celery
5 roma tomatoes
1 large red pepper
1 large cucumber
1/2 small onion
3 small or 1 large cloves garlic
1 small bunch fresh parsley
fresh basil and thyme
sea salt to taste, I used Himalayan sea salt
Extract the juice from the lemon, set the lemon juice aside. Juice the celery, tomatoes, red pepper, cucumber, onion, garlic, parsley, basil, and thyme in a juicer. Strain the gazpacho juice through a strain to remove the foam. Stir together the gazpacho and lemon juice and add sea salt to taste. Enjoy!
Make about 1 quart juice
I’m feeling so fantastic and believe I can continue on so that’s what I’ll do, continue on this juice feast, taking it day-by-day. Eight days is the longest I’ve fasted or feasted. It will be exciting to see how many more days I can continue on this juicy journey. Cheers!

Mmmmmmmm… the crisp colors in your photos are so enticing & delicious! Congratulations on your juice feast success! How many glasses of juice do you drink each day? Are you also drinking plain water or herb tea, or taking any supplements?
Hi Diana – how funny you mention herb tea! Yes, in fact I am drinking herbal tea. I normally always drink it but decided to focus on juice only until the evening of day 7, when I resumed drinking herbal tea. I drink plenty of water and supplements, well I add MSM to my water or citrus water, and every now and then I might add spirulina to juice.
