Ruby Red Rhubarb

The juice feasting continues! Drinking healthy nourishing fruit and vegetable juices, as well as water, coconut water, and herbal tea, for the past 12 days has been a positive experience, and I’m loving it!
I enjoy diversifying my daily juice intake with juices on the sweet side and savory, it keeps it interesting, plus I really enjoy the variety of flavors. Here is what I drank yesterday and today:
Day 11
Morning: green apples, celery, parsley, alfalfa sprouts, cucumber, lime juice
Afternoon: fennel [bulb & stems], pears, oranges, apples, fresh ginger – 28 ounces; plain water – 32 ounces
Evening: Broccoli, bok choy, garlic, onion, ginger, small bit of cilantro, Himalayan pink salt, 30 ounces
Day 12
Morning:1 whole lemon [rind, pith, pulp] and 2 apples – 8 ounce; coconut water, 20 ounces
Afternoon: Ruby Red Rhubarb, 24 ounces – recipe below
Evening: plain water, 17 ounces; zucchini, red pepper, lemon, onion, garlic, basil, parsley, sea salt
This beautiful ruby red rhubarb drink is from a drink recipe I created last year. The original recipe is presented with each ingredient measured to make one serving. Since I’m drinking larger amounts of juice per serving these days, I’ve tweaked this recipe using unmeasured potions of each ingredient.
Also, I’ve included 2 apples to the mix for a bit of natural sweetness (agave was used in the original recipe); without the addition of apple, it has a sweet/sour taste (it may be one the sweeter side or more sour depending on the ripeness of the ingredients) and is still very delicious.
Ruby Red Rhubarb
2 apples
Fresh strawberries, green tops removed
Fresh raspberries
Rinse well all the ingredients. Peel the outer skin of the rhubarb stalks with a vegetable peeler. Run the peeled rhubarb stalks, strawberries, apples, and raspberries through a juicer. Enjoy!

Okay, confession. I have never had rhubarb. What’s the deal with peeling the stalks? Now you’ve got me curious and I’m going to the store in search of some.

Dearest Earthmother – I’m due to write a post about rhubarb. About peeling the stalk, the outer red skin is stringy so I like to peel it off to avoid clogging the juicer.
