Carolyn Akens

Thank goodness for the Internet and all the wonderful social networks that have helped us make connections that we might not have otherwise been able to make. I mention this here because this is how I meet Carolyn. We connected via Twitter and I have since discovered great things about this wonderful lady.

Carolyn is a certified raw food chef and instructor, nutrition consultant, and lifestyle coach based in Atlanta, GA. She holds Alissa Cohen’s Living on Live Foods Chef certification, and has acquired additional training.

Besides creating delicious recipes and passing on this knowledge and information by teaching others, her goal and passion is to assist those who deal with weight and food-related health issues learn the importance and benefits of raw and living food to nourish and help maintain a healthy lifestyle.

In this interview Carolyn shares with us how she became interested in raw living food, who inspired her as a chef, lists some of the favorite raw vegan foods, and more.

Meet Carolyn!

RE: Tell us a bit about your background as a chef and at what point in your culinary career you became interested in raw living food?

CA: I began my culinary career in 2001, and became a personal chef. I prepared health-conscious meals for clients based on the Mediterranean-style of cooking, which consist of proteins (lean meat and fish), vegetables, whole grains, fruits, beans, nuts, and unfiltered extra virgin olive oil.

I became interested in raw living food after the death of my younger brother who died because of obesity. I knew I didn’t want anyone else to go through something like that. I also knew in order to be a change that I had to make a change in me before my family and friends would truly listen. I’m 5’4 and at that time weighed 175 lbs., which made me obese. I also was dealing with my own health issues…high cholesterol, migraines, arthritis, and weight fluctuation. I went to the Internet and began my quest. I took a raw food class locally and knew there had to be more.

I flew to Chicago and was trained at Raw Gourmet International Culinary Art Institute by Chef Mehmet Ak. I returned home and decided to go on a green smoothie fast after reading Victoria Boutenko’s book Green for Life and fasted for 30 days. I made raw foods a standard of living and went through an amazing transformation. I have no health issues; I’m a size 6; and have so much energy and mental clarity.

RE: What do you enjoy most about being a chef?

CA: Artistry! You have the ability to create delicious and beautiful food using various canvases.

RE: What advice would you like to share with aspiring raw chefs and those of us who love to prepare raw food at home?

CA: Be creative and have a wonderful time with food; try various herbs and spices; step outside the food box, and always incorporate love in each dish created. Continue to learn and improve your skills.

RE: Do you see raw living food growing more popular in Atlanta?

CA: Absolutely! There is a great movement going on in Atlanta and surrounding cities.

RE: Are there many raw food restaurants in Atlanta?

CA: No. We have one, Loving It Live, and one that is vegan and semi-raw, R. Thomas Deluxe Grill.

RE: Who and/or what inspires you as a chef and why?

CA: My late grandmother was my inspiration. She wasn’t a “chef” but a home cook with tremendous talent. She won many awards at the county fair and was the best cook in our hometown in AL. She had her own vegetable garden and only used fresh ingredients. My love of food is because of her.

RE: What do you enjoy most about being a raw and living food instructor?

CA: I love sharing my knowledge of raw foods, various techniques, and knowing the difference that each one of my students will make in their own lives/health and the lives/health of their love ones.

RE: If you could be or do anything else what would you be or do?

CA: A pathologist.

RE: What one word would you use to describe yourself?

CA: Love

RE: What’s the one thing about you few people know?

CA: I love being around the elderly…they have so much wisdom.

RE: What have you accomplished that makes you most proud?

CA: Knowing that I am making a difference in the lives of people who struggle with obesity and eating disorders. Obesity is not hereditary, but what we put in our mouth!

RE: Name some of your favorite raw food recipes - savory and sweet?

CA: Kale salad, enchiladas, couscous, lasagna, tacos, onion rings, dolmas, corn chowder; pistachio & walnut baklava, Georgia pecan pie, carrot cake, lemon coconut cake, pineapple gelato, strawberry tart.

RE: I know there are many incredible raw food recipe books currently available, but if you could only have one, which one would that be?

CA: There are many great ones and I have several, but my one consistent is Everyday Raw by Matthew Kenney, (and I must add RAW by Charlie Trotter & Roxanne Klein).

RE: What are some of your favorite kitchen gadgets?

CA: Vita-mix, Cuisinart FP, mandoline, microplane grater, peeler, pepper mill

RE: Tell us one of your most amusing behind-the-scenes kitchen stories?

CA: My grandson and I were making a strawberry tart and I wasn’t paying attention when he asked which bottle had the agave and I said the one on the counter and he used extra virgin olive oil!

RE: How about the most amusing response you’ve experienced or reaction you’ve received when you told someone about the raw food diet?

CA: You eat raw meat, gross!

RE: What has a raw food diet and lifestyle revealed to you?

CA: We can end obesity; diabetes can be reversed; and diseases can be cured.

RE: What project(s) can we look forward to from you in the coming months?

CA: I’m working on a dessert book (my grandmother was a phenomenal baker and I’m transforming her dessert recipes into raw). I’m working on a project for obese children with a local organization. Marketing my nutrition bars (www.agapenutrtionbars.com) and they are also sold on www.foodoro.com

    Hard question to answer. I’ve just started on my journey toward more raw foods, inspired by a friend at our farmers’ market. I”m not 100% but 2 of my 3 meals a day are raw. At first I thought my friend’s diet was pretty odd, but now I’m full of questions for her. It’s not really amusing so much, but most often my questions about raw food is…

    “Can I get a recipe for that?”

    I have asked her also about her health (since I have chronic tummy issues). I suppose an amusing question I have asked is if she has problems with gas after eating all that dried fruit. I suppose that count’s as amusing doesn’t it? :)

    I have been amazed at how wonderful raw food is and so thankful that I have her and this blog to inspire me. Thanks!

Aiming for 100% is fine but maybe not be work for everyone. Take into consideration all aspects of your lifestyle and your needs to determine what amount of percentage of being raw works best for you. Hurray for great friends who inspire us! :-)

    The most amusing response I get from people when I tell them I am raw vegan is: vegan? Is that a religion? My answer is normally: “Yes. It is actually a Cult! But you can join for free!” Love seeing their reaction!

    I’d like to be entered in the drawing! I don’t know that I’ve made any amusing responses to raw foods as a non-raw foodist besides commenting that it seems to take a whole lot of time and effort to make a lot of raw dishes (especially baked goods). When I first heard of raw veganism, I didn’t know what to think, but now I think it’s an awesome lifestyle!

    Hi Marie and welcome! Yes, creating raw goodies dehydrated at low temperatures can take some time. Raw vegan cookies, for example, can be make with or without any heating, but if you are looking for something close to a “baked” cookie texture, that’s when the dehydrator comes in handy.     Raw Foodists: What was the most amusing response you’ve experienced or reaction you’ve received when you told someone about the raw food diet?

    Hi Earthmother - Isn’t Carolyn great! Ha! I’ve heard that one before and the comment came from my dear hubby, who is now eating “high” raw and requesting that I make more and more raw recipes for him.

    I would love The Everyday Raw book or Raw, since I already own Green for Life.

    Well, since I have crohn’s disease, I get a lot of “You can eat that, it’s raw..” When I tell them it’s all I eat they say that I am crazy and make myself more sick. I tell them to look up raw food diet and crohn’s online and then talk to me! :)

    Hi Lauren - good for you! I love your response to their comment. Honestly, I don’t know much about crohn’s disease but believe eating the healthiest food you can contributes to helping our bodies heal from disease.

    oh my goodness I am a huge fan of Charlie Trotter. I admire his perfection. But I have to be honest I hadn’t a clue he has a raw book out there. I bet it’s absolutely perfect.
    I was turned on to raw food by carol alt, many years ago. plus a few visits to nyc and eating the wonderful array of foods in many of the raw food rest. has slowly but surely been turning me on to raw food. one day, I hope to be all raw…

    I’m a high RAW vegan (but definitely not all RAW) and I haven’t gotten any particularly amusing responses - just weird stares and something along the lines of “Really? What do you eat?”

    I already have Green for Life and I’d prefer Everyday Raw, but whatever :)

    Another great interview Ingrid! :) When I tell people I am gluten free and eat “high raw”, the typical response is first silence…then a perplexed look…then the question of “What’s that?”. I give a brief description and then the next question is (the most common one), “What do you eat?!”

    Yay, what a fun give away! I can’t even pick which one of those books I want, they’re all on my list of books to get, so I just hope I win any one of them :)

    The most amusing response I’ve had to raw foods is “But what can you eat, then? There’s, like, nothing…” and I just want to ask “Are you kidding?! There’s so much to eat I can’t even begin!”
    I’ve had that question a lot even since I just went vegan, not even raw (although I know that the two don’t always go together).

    I found your site while searching for raw recipes. After 10 years of improving our diet and health, my husband and I started the raw diet 2 weeks ago and have agreed that this is permanent change. My most amusing response came from my grandmother who was worried that eating too much raw food would make me sick.

    I’m really enjoying your site. I’m just getting started with raw, so it’s nice to find great online resources. Anyhow, I visited an old friend recently whose mother now lives with her. When my friend told her I’m a raw foodist now, she said, “well at least she’s not a pagan anymore!” Haha…ten years after I told her about my veganism, and she still mixes those two up!

    The article on Carolyn was amazing. I have had the privilege and honor to meet Carolyn and she definitely has it together. I am not a raw foodist yet, but aspire to start this summer; both my husband and I. To qualify for the giveaway per your question below…

    If you aren’t a raw foodist: What is the most amusing response or reaction you’ve expressed to a raw foodist or about raw food? I had some date candy that was so delicious and asked how did you make the caramel for this raw candy? Well it was not caramel but no one would have ever known that.

    I am new to your blog and to raw foods so I could benefit from any of the above prizes LOL :)

    The strangest reactions I have received from others (non vegan SAD diet eaters) when I have spoken of my interest in raw foods has been “do you use a deoderant crystal?” This caught me totally off guard and I just laughed and laughed–I do not see the connection at all but I guess the person thought that expressing interest in the whole raw foods movement and veganism meant that I was heading for some kind of hippie existance and in her mind that meant a crystal (I DO use organic deodorant, btw). The person who said this comment was my husband’s grown daughter and she is a big SAD eater (she has really been changing her ways since I have entered the picture–the soft sell does work!).

    Aside from the perennial, “So, um, what do you EAT?” one of my favorite remarks was “I guess you eat a lot of oatmeal.”

    You mean the oatmeal that one cooks with boiling water on the stove?? It was odd :)

    Hi Gena - that’s funny and I know what you mean but you actually can eat oatmeal raw if you soak it. However, finding organic whole oats that are truly raw [that haven’ been steamed] is difficult. I’ve made raw oatmeal in the past and its delicious, but I honestly can’t say that I can be sure those oats were actually raw. Other whole raw grains, like kamut or spelt, are great substitutes.

    The funniest response I got was someone thinking that a raw cake was just uncooked traditional cake batter, LOL. That, and people feeling sorry for me that the only thing I could eat at a dinner was salad - they wouldn’t believe that I was happy with that :) And to be honest, I used to feel the same way - salad was no meal!

    Hi - yes - I’m about two and half months into raw life and loving it - really cannot get over how good I feel - what sense of inner well being I have. My WH is, however, very conservative in his food choices, and naturally a bit worried about how all this is going to affect him. Recently, we had some friends over for a potluck - I titled it ‘As Raw as Possible’ Well WH, with some consternation queried ‘You’re going to wear clothes aren’t you?’ Somwhere, somehow WH had melded ‘raw foodists’ with ‘raw nudists’. I’m middle aged - can you believe it - oh the mind boggles!

    I have only one raw cookbook - and I reckon I know every word in it by heart - and it sounds as if Everday Raw comes highly recommended. I would love to have a copy - as long as there aren’t any raw nudists inside!

    Thanks for the opportunity to laugh (again) this morning and to maybe recieve a new book.

    Hi! Thank you for offering yet another awesome drawing! I haven’t had any funny responses yet. I’ve only been raw since Sept and I don’t think my friends/family get it yet (i.e. a relative sent a package of cooked brownies, my mom sends me recipe links that are all cooked pasta and one that was “mostly non-meat” — what? I’ve been veg for over 15 yrs!!) But at least she and I agree that eating home-grown organic veggies is the bomb! I’ve got Everyday Raw on loan from the library right now and love it! I’ll be sad the day I have to return it, so I’ll be keeping fingers crossed for this drawing!

    p.s. I just read the comment about the crystal deodorant. I hope she wasn’t too embarrassed because I think it’s a great question! If she’s talking a healing crystal, like trying to use rose quartz or something, then I’d agree that not many raw foodies try that. I believe though she’s talking about the mineral salt deo. like at this site: http://www.thecrystal.com They sell them at health/natural food stores.
    I’ve been using the liquid roll-on version for years but yes, they do have one shaped like like a rock too (looks like a crystal) and it lasts a very long time. I didn’t like having to wet the rock before rolling on so I switched to the roll-on bottle. A natural source of odor-control. Since many raw foodists are about detoxing, switching to a very natural deo. is popular and a great idea. Something to shock her with next time might be to explain that after detoxing, many raw foodies don’t even have to worry about body odor any more — our bodies aren’t trying to dump toxins out every pore and we just smell better. As if we didn’t already have enough reasons to go raw…. :)

    Hi Angelique :) Yes, I think that crystal rock shaped deodorant is what my husband’s daughter meant–it just caught me totally off guard when she immediately associated that with my discussion of eating more raw, unprocessed and vegan foods (remember, she eats high meat SAD diet). I did not take offense nor did I laugh in a mean spirited way; I giggled/laughed because it just caught me off guard. To her credit, she has watched her dad (my husband) during our 4 years of marriage (and then being together for 4 years before that) become more vital and healthy as he has become vegan and gluten free (to manage a health condition through diet, not drugs). She has been eating more fruits and veggies, has lost weight, has begun to exercise regularly….it is wonderful and has been through a ’soft sell’ approach and example.

    I wanted to clarify because I did not want you to think that I responded in a mean way. Her question just caught me off guard and was funny at the time :)

    Thanks for the interview. It’s wonderful to read about Carolyn who changed her life for the better. It’s wonderful that she has learned so much about Raw food and continually shares that knowledge with others.

    This is so exciting! You are always so kind in offering us these great gifts:) I would say the funniest response was from my son. He said, “Does that mean you can only eat the cookie dough?” It was quite entertaining and I knew I had my work cut out for me being able to explaining the Raw lifestyle to my family.

    I think that raw foodist sounds like the diet man was meant to enjoy - actually, I’ve been considering such ever since I became a vegetarian roughly 4 years ago!
    So my reaction would be amazement, curiosity and admiration - I’ve just got to try this!
    Also, my win preference would be the yummy bars and Everyday Raw book (sounds kinky lol just kidding!:)

    Hi Mary - since you are already a vegetarian I believe it is easy for you to incorporate raw food into your diet. I bet you are probably eating a good percentage of raw food now like salads.

    Hi Susan - thanks for participating. Oh yeah, I’ve heard the same “you’re going to die” from my very own husband! At the time he said this to me I was fasting. I tried to explain how fasting works and let him know I successfully completed fasts in the past but he wasn’t hearing it. LOL!! I remember he was so worried. Well I’m still here and the best part is he now embraces a high raw diet and has done a mini fast. :-)

    I guess the most amazing experience I’ve ever had from raw food came from my own body. I didn’t want to go raw, my body decided exactly 2 years ago that it wanted a water fast and then loads of raw food.

    I think the funniest reaction was when I hosted a raw vegan potluck with some friends, since many of them were curious about raw (and vegan) food. Everyone came out with really creative things (’d sent along a lot of recipes and suggested blogs), except for this one guy (a friend of a friend) who had been concerned about what to bring, so he’d gone to a health store and bought a salad… with cheese on it.

    Everyone was looking at me to break the news to him, so when I explained, he looked so confused, and said, “But you can eat it cold! So it’s raw!”. It was really funny, and kinda tragic at the same time :) We laughed so hard… and so did he, after a minute, although he kept saying, “I just don’t GET your food!”.

    I’ve borrowed everday raw from a friend, but i’d love to read one of the other two… and I’d love to try those bars too! YUM!!

    I’ve dabbled in raw foods, and was asked by a good friend how I would eat meat now…and how I could survive without dessert! And then I made some of Ani Phyo’s raw donut holes.

    Thank you for this wonderful interview!

    The most amusing reaction was probably from a flight attendant on a flight that I had ordered a raw meal. She took a sad look at my plate (half of which was roasted nuts, and cooked fruits in a syrup, but that’s another story) and asked “Are you sick or something?” and generously offered me a second roll of bread with my ‘raw’ meal.

    I would love to win Everyday Raw, but would be very happy with any one of the prizes.

    I’m not 100% raw, but I am vegan, and I haven’t gotten any crazy amusing responses besides the typical “what do you eat” “how do you live” we all get. i think people are surprised when i don’t fit into the “stereotypes” most hold for “vegans”-dreadlocked hippies is what they expect i think. lol

    I like Raw Sushi too my favorite is Raw Tuna and Wasabi and Pork with Sake. We definitely should go out sometimes to the downtown Sushi Restaurant.

    So in regards to responses, after telling my grandmother about being raw she just opened her eyes really wide and asked me, “How are you going to find and feed your future husband?!” Hehe

    I’m slowly trying to incorporate more raw into my diet. Most people comment that “You can’t actually live just on raw food” Ah if they only knew what the benefits were.

    I’d be happy with any of the books since I’m fairly new to this.

    You can’t eat corn raw, you’ll get worms!

    LOL! That cracked me up! I do wash it with a veggie brush and an organic vegetable wash or agrisept, but I wonder if they eat apples or carrots or anything else that isn’t protected by leaves???

    The most amusing response I expressed was to Miss Lillian of Raw Soul(raw food restaurant-here in New York),that after coming regularly to her restaurant eveyday for lunch, that I said, “This is incredible!None of this food is cooked? This is incredible! This food is DELICIOUS! But how can this be? It’s not cooked!I got to get my head around this.This is too simple and damn if I don’t feel better.I think I can actually do this and start eating nothing but raw food.” P.S. If I’m chosen I would like Matthew Kenney’s EVERYDAY RAW. Thank You, keep on being RAWABULOUS!!!

    I have never received an amusing response, everyone looks at me dead serious and asks “how are you going to get your protein?”. Most people seem to be brainwashed into thinking the only thing with protein is cooked meat.

    Well, I seem to be late on the raw bandwagon as far as my community and circle go. I’ve recently become around 95% raw, and my lifestyle seems to be catching on this raw vibe very fast. For ages it seems people around me were all becoming raw.

    The most amusing thing I used to say to raw foodists was “Oh, well if you’re not going to eat my organic vegan cooked XYZ, more for me.”

    Now if anyone says “You mean you just eat greens, fruit, spouts, nuts seeds & seaweeds?” I say “yes, and if you don’t want some, there’s more for me!”

    But I’m so satisfied with eating just a little, I don’t really mean it like I used to…

    I try to make simple raw foods for my children to share with their classmates in hopes of introduce them to raw foods. One day I made chocolate macaroons from “Raw Food Real World” and sent them to class. When I arrived after school to pick up my kids all the Jr. High students were yelling to me, “Great Jen Wads! We want more!” My name is Jennifer and the kids made up their own name for the treat they loved.

    Although I’m not 100% raw, myself and one of my sisters continue to bring healthy and sometimes raw dishes to family get togethers. On one occation my sister brought an artichoke dish for our meal. When one of my sister-in-laws asked about the dish, my sister said it was a dish her friends enjoyed eating. My sister-in-law’s reply was “Well, we’re family”.

    Needless to say our siblings along with their immediate families are struggling with being obese and some with diabetes. I refuse to let my children grow up eating the same processed and chemical laden foods I did.

    I was overjoyed to meet Carolyn by chance one day. I had heard of eating raw but was not sure of how to get started. I was fortunate enough to be on the receiving end of some of Carolyn’s new dishes and I did attend one of her classes. She’s awsome!! I’d like to learn more.

    I would say that my most amusing response was like Carolyn’s: “You only eat your meat raw”?…not a clue-lol! The greatest gift is explaining the raw lifestyle to people who are coming from such a disconnected place…and have the opportunity to really practice gift of patience ; )

    Another amusing response was, “Don’t you miss food”?…as if eating raw means only eating bland carrot sticks and crudites. I love this response, though, as I used to be a hardcore foodie so it’s a wonderful reflection for how far I’ve come….

    Oh- if I win, my gift preference would be, 1) RAW, 2) Everyday Raw, and 3) Green for Life…

    My response was to my neighbor who told me he was eating raw to cleanse his body, and said that he had eaten raw zucchini and summer squash. I was grossed out at the idea of eating those two veggies raw, and plain.

    I know it’s too late, don’t know how I missed this one but I would like to share anyway.

    Most amusing/annoying: Q: “How come your cat gets to eat kibble made with meat and I can’t cook meat in the house” From an EX-room-mate.
    A: “If you hunt a mouse and kill it, you can cook it in my favorite pan and eat it. Until then, sorry, the rule was set when you moved in, no meat. I’m even nice enough to let eggs and milk in but I draw the line at dead flesh, sorry. Barbecue is out back. It’s raining? I guess that is pretty inconvenient. Not as inconvenient as DYING which is what that poor pig did for your bacon, assbrain.”

    If I ever got a kitten for some reason, i would probably try to raise it semi veg or at least on raw meat, but my cat was 5 years old when his original owner died and he came to live with me with a life long kibble habit. He eats a better quality of food now but I wouldn’t try to make him go veg. Besides, he like to kill the mice that try to eat my clothes and poop in my food. Sometimes it’s nice to have a obligate carnivore in the house.
