Dill [Anethum graveolens]
If these first days of this new year are any indication of the year ahead, then it truly does seem like it’s going to be a happy new year. The California weather has been warmer than usual for this time of year, dare I say it’s somewhat Spring-like. The other day it was nearly 80 degrees in Los Angeles.
This incredible weather got me thinking about planning a container garden, so I picked up one of the herb catalogues I recently received in the mail and started flipping through it. Talk about inspiration. I want to plant lots and lots of herbs. There can never be too many herbs in a garden, I say. [... my rationale, my excuse for buying all the herb seeds I can.]
The front of the catalogue advertises dill as the herb of the year. Every year since 1995 The International Herb Association features one herb as the herb of the year. This year it’s the green and feathery leaves of dill that won the honors. It is certain I’ll plant dill in one of my potted containers. Since it’s this year’s herb of the year, I thought it was fitting to feature dill as our herb of the month.
I flip to the page in the catalogue to read what I can learn about dill, also known as dill weed, and what do I see but a list of different dill varieties, like:
Bouquet dill
Delikat dill
Dukat dill
Fernleaf dill
Green Sleeves dill
Hercules dill
Mammoth dill
Monia Dill
Tetra Leaf Dill
Who knew [I sure didn't] that dill had multiple varieties. I wonder if you can easily distinguish the difference from one variety to another? Every time I’ve seen fresh dill it has always looked the same to me, no variance in shape or color, it just looks like dill.

Some Facts About Dill
~ It’s name comes from the old Norse word “dilla” which means “to lull”. This name reflects dill’s traditional uses as both a carminative stomach soother and an insomnia reliever.
~ It is scientifically known as Anethum graveolens and is part of the Umbelliferae family, whose other members include parsley, cumin and bay.
~ Dill is a noted herb in the cuisines of Scandinavia, Central Europe, North Africa and the Russian Federation.
Whether you use fresh or dried, you want to keep it as fresh as possible. I like to store fresh dill as I would flowers, I place the stems in a container of water. Dried dill I store in an airtight container and keep it in a cool, dry cabinet.

I like using both fresh and dried dill in recipes. Chopped dill leaves go well with cabbage, carrots, tomato, and of course beets, and cucumbers. It combines great with cilantro, parsley, and cumin. Make a great salad dressings with it, a creamy sauce, or sprinkle generous amounts of it over a salad.

I like to cut up some cucumbers and red onions, pour garlic vinegar over them, and add a generous amount of dill to make refrigerator pickles. It’s really simple, but super delicious.
I love dill, it’s quite possibly my favorite herb! I add it to my salads a lot and I also really like it in nut and seed pates. Thanks for the info, I didn’t know a lot of this :)
I bought a dill plant this fall ( I live in florida) and really enjoyed having fresh dill in my garden, I left it in the pot having read that they don’t transplant well. Right away it started to dry, mostly from the bottom up. Tried more water, less water, more sun less sun etc. It’s still hanging in there, barely…. any tips? I cut off the flowering parts for the seeds, hung them upside down in a paper bag and will probably plant them as soon as the weather improves. I was able to use quite a bit of it to make Gravlax and it turned out to be the best one ever!!! nothing like the spring aroma of dill.
An herb garden is a wonderful thing. They can be used in so many ways, and one of my favorites these days is to add them into my green smoothies.
I love to include dill in my chicken salad for a tasty treat and there’s nothing better than carrots marinated in olive oil and dill then grilled until tender. Mmmmmm.

Dill is one of my absolute favorite herbs–I can put in anything and everything. It adds so much freshness. And it is a great blood cleanser.

So funny..I just said the other day that dill is probably my favorite herb! I sprinkle it on cooked/raw veggies of all kinds; everything is better with it!
I love it on top of salmon, and my sister makes an amazing creamy dill sauce for fish.
I use Dill in vegetable dips,the flavor gives the dip a BANG!
I love dill, it comes up every year in my garden. One way we use it is to spread cream cheese on a mini rye bread, sprinkle with garlic powder, put a cucumber slice on top and sprinkle with dill , yummy!

I love dill on a roasted chicken with lemon.
I like dill on baked or broiled fish. Also love to make a cucumber salad with thinly sliced (fresh from the garden) cukes, fresh dill (also from the garden), sour cream, fresh cracked pepper, a pinch of sugar, and grated lemon peel. It’s a great summer dish, goes well with the fish and is very refreshing.
I have a cucumber/pasta salad recipe that also contains dill. Very good.
I all ways add dill weed to my scrambled eggs. I used to keep a couple of dill plants just outside my kitchen window.
My husband’s father’s family is from Finland. Hubby likes dill in almost anything: eggs; any kind of chicken or fish, including salads and especially on a traditional Finnish beet salad.
The flavor of Dill is so unique that I rarely add other herbs when I use it. Just a spoonful of plain yogurt, the dill and a slice of fish pie is all I need.
I use dill in my chicken soup. Yummy
I add dill to my Greek Salad.
I like to use it when I make salmon and other types of fish.
Two of my favorites are in a white sauce to pair with broiled salmon and in a butter dipping sauce for fresh artichokes.
I like using dry dill in tuna fish salad.

What a lovely site! Your work here is much appreciated. I have studied herbs for many years, but it is always good to read more information (both to learn new facts, plus to refresh one’s memory) from other sources.
Dill is one of my favorite herbs; I tend to use it a lot in food preparation. Perhaps those herbs we (over)use contain exactly the nutrients our bodies require? Food for thought.

I have made and enjoyed Ani Phyo’s Mediterranean Dolmas recipe. Dill is a major ingredient in these. Delicious.
What perfect timing! My sister-in-law and I were just talking about what we would plant in our gardens. She mentioned dill cuz she loves the smell – she doesn’t necessarily use it!! I like the smell AND use it!! We make a snack mix around holiday time that uses dill as one of the spices – it’s delicious and different from most snacks people bring!
Freshly snipped dill out of the garden and gently tossed on organic steamed carrots. Simplicity. I can taste it now. Dillicious! Hurry up spring.

I like mixing fresh dill with unflavored yougurt to make a dip for vegies.
Dill is a great herb. It is a “must have” herb for every garden. My favorite way to use dill is on tomatoe slices with some melted cheese on top.

i use dill in israeli salad! chopped small: tomatoes, cukes, scallion, dill, lemon juice, salt and pepper and DILL!

I wish I’d had some in my garden this past summer as I was canning pickles! I’ve used dill with eggs – a sprinkle on deviled eggs or stirred in with scrambled. Good in salad dressings, too.
I recently used dill to add some excitement to a creamy avocado “alfredo” sauce for my zucchini pasta! I was surprised at how wonderfully the two flavors complemented each other. (I store my dill the same way, trimming the ends and placing them in a shallow dish of water in my refrigerator door. Stays fresh for so long that way!)

My family loves dill! To give our homemade pizza a unique taste, we sprinkle some in the pasta sauce before putting it on the pizza!
My favorite way to use dill is in my own fermented sauerkraut. It always makes it taste delicious
