Stuffed Medjool Dates

Medjool dates are always a welcome indulgence on their own, but when paired with a nutty-fruity mix, they become even more pleasurable.
The filling can be a blend of any combination of nuts, seeds, and dried fruits that suit your taste and the season. If you don’t have tangerines on hand, swap the tangerine juice with any other variety of citrus orange.
These sweet bit-size treats make a nice addition to a dessert buffet, served as a quick snack, or savored with tea. Make a platter of them for a delicious take to your next holiday party.
Stuffed Fresh Dates
Santa himself might stop by just to get a taste of these rich little morsels.
1/4 cup each walnuts, hazelnuts, pumpkin seeds, organic raisins, dried cranberries, organic dried apricots
2 tablespoons tangerine juice, fresh squeezed
1/2 teaspoon ground cinnamon
1/4 teaspoon fresh nutmeg, zested
Cut each date open midway and remove the pit. Set aside.
Place the remaining ingredients into a food processor and process approximately 20 seconds to chop the nuts and seeds, and incorporate all ingredients well.
Open each dates wide enough to hold 1/2 tablespoon of the stuffing.

Makes 1 cup Sweet Stuffing
